| 1. In a large skillet, melt butter over medium heat. Add shallots, and cook until |
| translucent, about 3 minutes. Add flour, and cook, stirring constantly, for 1 minute. Add |
| milk, nutmeg, salt, and pepper; raise heat to high and cook, stirring constantly, until |
| mixture is reduced by half, about 2 minutes. |
| 2. Add chard, and cook until tender and coated with the thickened milk mixture, 3 to 4 |
| minutes. Serve immediately. |
