ROASTED POTATOES

Time: About 2 hours



3 pounds large oval potatoes, peeled and quartered lengthwise

1 cup water

1/2 cup extra-virgin olive oil

Juice of 2 lemons, strained

2 teaspoons dried Greek oregano

2 garlic cloves, peeled, crushed and chopped

Salt and freshly ground black pepper.


1.Preheat oven to 375 degrees. Place potatoes in a large baking pan. Toss with all remaining

ingredients. Bake, uncovered, for about 1 to -2 hours, tossing in pan occasionally. Add more water

if necessary to keep potatoes from sticking. Remove and serve.



Yield: 6 to 8 servings
