| 3 pounds large oval potatoes, peeled and quartered lengthwise |
| 1/2 cup extra-virgin olive oil |
| Juice of 2 lemons, strained |
| 2 teaspoons dried Greek oregano |
| 2 garlic cloves, peeled, crushed and chopped |
| Salt and freshly ground black pepper. |
| 1.Preheat oven to 375 degrees. Place potatoes in a large baking pan. Toss with all remaining |
| ingredients. Bake, uncovered, for about 1 to -2 hours, tossing in pan occasionally. Add more water |
| if necessary to keep potatoes from sticking. Remove and serve. |
