| Peanut oil for deep-frying |
| I cup freshly grated Parmesan cheese |
| 1/4-teaspoon cayenne pepper. |
| 1. In a Dutch oven, heat 2 inches of oil to 375 degrees. |
| 2. Beat the egg whites until stiff peaks form, then fold in Parmesan and cayenne with a rubber |
| In batches, drop small teaspoonfuls of the mixture into the hot oil and fry until lightly browned - |
| about 2 minutes - turning puffs as necessary. Drain puffs on wire rack, sprinkle with more cheese if |
| desired and serve immediately, accompanied by tartar sauce. |
