Parmesan Puffs



Peanut oil for deep-frying

3 large egg whites

I cup freshly grated Parmesan cheese

1/4-teaspoon cayenne pepper.



1. In a Dutch oven, heat 2 inches of oil to 375 degrees.

2. Beat the egg whites until stiff peaks form, then fold in Parmesan and cayenne with a rubber

spatula.



In batches, drop small teaspoonfuls of the mixture into the hot oil and fry until lightly browned -

about 2 minutes - turning puffs as necessary. Drain puffs on wire rack, sprinkle with more cheese if

desired and serve immediately, accompanied by tartar sauce.

Yield: Around 12 puffs.
