| MUSHROOMS WITH MANZANILLA |
| 2 tablespoons extra-virgin olive oil |
| 1 1/2 pounds mixed mushrooms (like shiitakes, oyster and white button) trimmed and cleaned, |
| 3 tablespoons manzanilla or fino sherry. |
| 1. Place a large sauté pan over medium heat and add olive oil. When oil is hot, add mushrooms |
| and garlic. Season lightly with salt. |
| 2. Sauté until mushrooms soften and release their liquid. Continue to sauté until most liquid |
| evaporates. Add sherry and sauté for 1 more minute. Season with salt to taste. Serve, if desired, |
| with crusty bread, thin slices of Serrano ham and glasses of manzanilla sherry. |
