MUSHROOMS WITH MANZANILLA

Time: 15 minutes



2 tablespoons extra-virgin olive oil

1 1/2 pounds mixed mushrooms (like shiitakes, oyster and white button) trimmed and cleaned,

thinly sliced

Sliver of peeled garlic

Sea salt

3 tablespoons manzanilla or fino sherry.


1. Place a large sauté pan over medium heat and add olive oil. When oil is hot, add mushrooms

and garlic. Season lightly with salt.



2. Sauté until mushrooms soften and release their liquid. Continue to sauté until most liquid

evaporates. Add sherry and sauté for 1 more minute. Season with salt to taste. Serve, if desired,

with crusty bread, thin slices of Serrano ham and glasses of manzanilla sherry.



Yield: 4 tapas servings.
