| Blackberry Bay Leaf Champagne Spritzer |
| 2 cups blackberries, more for garnish |
| 6 fresh or dried European bay leaves, more for garnish |
| 1 tablespoon fresh rosemary leaves |
| 1 bottle Champagne or Prosecco |
| Mint sprigs, for garnish. |
| 1. Bring 4 cups water to a boil. Add sugar, blackberries, 3 bay leaves and rosemary. Boil until |
| liquid is reduced to 3 cups. |
| 2. Strain into another saucepan. Add remaining bay leaves, and simmer until reduced to 2 cups. |
| Discard bay leaves; cool. |
| 3. For each serving, fill a tumbler with ice. Add 1/3 cup blackberry liquid. Fill glass with |
| Champagne and stir. Garnish with a blackberry, bay leaf and a sprig of mint. |
