| Time: 30 minutes plus cooling time |
| 2 large apples, preferably golden delicious or fuji |
| 1/2 vanilla bean, split lengthwise |
| 1 tablespoon unsalted butter, softened |
| 1/4 cup all-purpose flour |
| 4 small slices country bread. |
| 1. Peel, core and coarsely chop apples. Place apples in a small saucepan with 3/4 cup water and |
| vanilla bean and cook over medium heat, stirring frequently and adding more water if apples seem |
| dry. Cook until liquid has evaporated and apples are soft enough to mash with a spoon. Beat |
| apples so that you have a chunky applesauce, transfer to a bowl and cool to room temperature. |
| 2. Put butter, sugar and flour in a small bowl and use your fingers to blend ingredients; set aside. |
| 3. Put bread on a baking sheet and toast under a broiler or in a toaster oven on one slide only. |
| Spread toasted side of each piece of bread with applesauce and top with small clumps of streusel. |
| Position broiler rack as far from heat source as your broiler allows. Grill tartines until streusel is |
| golden, about 2 minutes. Let cool 5 minutes before cutting into pieces and serving. |
