APPLE CRUMBLE TARTINE

Time: 30 minutes plus cooling time



2 large apples, preferably golden delicious or fuji

1/2 vanilla bean, split lengthwise

1 tablespoon unsalted butter, softened

1 tablespoon sugar

1/4 cup all-purpose flour

4 small slices country bread.


1. Peel, core and coarsely chop apples. Place apples in a small saucepan with 3/4 cup water and

vanilla bean and cook over medium heat, stirring frequently and adding more water if apples seem

dry. Cook until liquid has evaporated and apples are soft enough to mash with a spoon. Beat

apples so that you have a chunky applesauce, transfer to a bowl and cool to room temperature.

2. Put butter, sugar and flour in a small bowl and use your fingers to blend ingredients; set aside.

3. Put bread on a baking sheet and toast under a broiler or in a toaster oven on one slide only.

Spread toasted side of each piece of bread with applesauce and top with small clumps of streusel.

Position broiler rack as far from heat source as your broiler allows. Grill tartines until streusel is

golden, about 2 minutes. Let cool 5 minutes before cutting into pieces and serving.



Yield: 4 servings.
