What can I import/export data and why is this important?CookenPro 3.0 Commercial offers extreme flexibility with the ability to make data from major applications available through import/export. Menus, recipes, inventory, inventory history, nutrition information, suppliers, and other information can all be exported and then imported back into CookenPro 3.0, allowing a large operation to distribute application data to remote sites that it manages and then import information from the remotes. Exported menus include recipes, ingredients, nutritional, and costing information. All are restored upon re-import back into another CookenPro 3.0. Back to TopCan CookenPro provide a nutritional analysis of my own recipes ?A 'Nutrition Wizard' provides easy assistance in analyzing your own recipes. You can nutritionally analyze ingredients, recipes, and menus. The nutritional data included is based on the U.S. Department of Agriculture Nutrient Database, Release 14; you can also add nutritional data and Import/Export that Data, making it available to other computers at your location or at remote locations that have CookenPro 3.0 installed. Ingredients that have been analyzed are exported with nutritional information which can then be imported back into CookenPro 3.0. Although allowing the computer to select mappings based on previous entries can be unreliable this feature can save work for common ingredients such as salt, flour, butter, olive oil, etc. CookenPro 3.0 implements such a search feature and then requires a review of the automated selection. Example: 2 dashes of salt have been mapped to "salt, table" 1 dash. The equivalent quantity of USDA portions is 2. When analyzing a new recipe with 3 dashes of salt as an ingredient, the computer is able to automatically map the previously selected USDA ingredient to the new recipe's ingredient with a click and then compute the required quantity. A manual checkoff for the ingredient is required in order for it to be included in the analysis. Nutritional information can be totaled by recipe, meal, or day and USDA Recommended Daily Intake percentages are available for all nutritional totals. Nutritional information is available in a variety of report and web enabled forms. Back to TopIs it possible to perform a cost analysis of a recipe or menu plan?Yes, the Costing Wizard is available from the "Edit a Recipe" view. The costing wizard allows mapping of each ingredient in a recipe to it's corresponding entry in the inventory. It allows extreme flexibility in the mapping. For example, if a recipe's ingredient is freshwater fish fillets - quantity 32 oz, it could be mapped to a 1 lb package frozen walleye fillets - quantity 2. The costing wizard calculates cost based on the Purchase/Bulk unit price. In our example if a case contained 12 1lb packages at a cost of $72.00 and the recipe served 4, the costing wizard would automatically calculate that each package cost $6.00 and that 2 packages would cost $12.00 the total cost of this ingredient in a recipe. The costing wizard aggregates the cost of all of the ingredients to arrive at a total recipe cost. The cost per serving is arrived at by dividing the total cost of the recipe by number of servings. Menu plan costs for each meal are arrived at by aggregating the cost of all recipes in a meal. Again the per serving cost is arrived at by aggregating per serving costs for each recipe in a meal. Back to TopDoes CookenPro 3.0 support Hazard Critical Control Point (HACCP) processes?CookenPro 3.0 supports the implementation of externally arrived at HACCP processes. HACCP process instructions are maintained in the database and are prominently available when viewing each recipe or when viewing the catered worklist. Thus CookenPro 3.0 provides support for HACCP process implementation. Back to TopWhat makes CookenPro 3.0 Commercial Unique?CookenPro 3.0 Commercial is a complete integrated food management package, designed with input from professionals. It includes recipe, menu, inventory, receivables, and purchase order management, publication, costing on a menu, recipe, or per/serving basis, accurate and easy nutritional analysis, USDA yield information, and many more features. It is designed to be a cost-effective alternative to much more expensive systems, while providing even more flexibility and functionality. Major applications are capable of importing/exporting data in open formats so that it can be distributed easily to multiple locations and computer systems. This allows for communications between computers that have CookenPro 3.0 installed as well as communication with your own computers or your vendor's computers. Example: The inventory history file can be exported so that report processing can be done by the vendor you have or by your own processing facility if you have one. Back to TopWho should purchase CookenPro 3.0 Commercial and why?CookenPro 3.0 Commercial is ideal for small and large catering operations, corporate cafeterias, hospitals, restaurant and restaurant chain operations. Cost effectiveness makes it appealing for smaller operations and the easy communication and interoperability of data is ideal for larger operations. It provides easy management and knowledge of commercial food operations. Multiple unique features provide the ability to closely manage a commercial food operation. For example, after ingredients in a recipe have been mapped to their corresponding inventory items, total aggregated quantities of actual inventory items can be calculated and applied against inventory. So you can easily apply receipts or the menu for a catered occasion against inventory to keep a running total. Reconciliation of physical inventory provides knowledge of actual inventory. The difference between the running total and actual total could be due to shrinkage, spoilage, or miscalculation of the amounts of required ingredients. It is knowledge of this difference that provides the basis for effective management and cost control of a food operation. How does inventory reconciliation work?CookenPro 3.0 commercial provides a reconciliation function. It begins by displaying a list of inventory items with quantities. A reconciliation sheet can be printed, data gathered and then entered back into the reconciliation form. After data have been carefully reviewed, they can be applied against current inventory. Inventory history records are created for each update. Alternately, an Excel/Pocket Excel file can be exported for import into a handheld device into which gathered inventory data is entered. After physical inventory has been performed, the data having been entered into the handheld device, it can be re-imported back into the reconciliation function. Again after review, the data are applied against current inventory. Back to TopCookenPro provides a catering list. What is this and why is it important? The catering list can be viewed or printed. It is a recipe with an extended ingredients list for each recipe in a menu plan. One click provides a work list, complete with description, tools, method, HACCP information, yield, serving size, and, of course, the extended ingredients list. Back to TopCookenPro standardizes the Unit of Measure. What does that mean?CookenPro recognizes the overwhelming majority of ways to abbreviate or represent a Unit of Measure and converts it to a single, easily readable and understandable term. ‘DS’ is turned to “Dash(es)”, ‘PN’ is turned to “Pinch(es)”, ‘Qt’ is turned to “Quart(s)”, and ‘t’ is turned to “Teaspoon(s)”. No matter what format a recipe was in when it was imported into CookenPro, the ingredients are easily readable and understandable when it is imported into CookenPro.
